Chimichurri Butternut Squash Casserole

Cook time: 45 minutes

Serves: 4

Ingredients & Items

  • 1 1/2 cup cooked butternut squash 
  • 1/2-3/4 cup unsweetened almond milk
  • 1/3 cup almond cream cheese 
  • 1 tbsp garlic 
  • 1-2 tbsp nutritional yeast 
  • 1/2 tsp black pepper
  • 1/2 tsp paprika 
  • 1/4 tsp cayenne 
  • 1/2-1 tsp lemon juice
  • Sea salt to taste 
  • 1 tbsp @axelprovisions spicy chimichurri
  • 1 box noodles cooked 
  • Bunch spinach raw 
  • Oven
  • Food Processor or Cutting Board
  • Large Baking Bowl

Directions

  1. Preheat oven to 350
  2. ‍In a food processor combine all of the ingredients except the noodles, spinach & Spicy Chimichurri
  3. ‍In a large bowl combine the sauce, Spicy Chimichurri, noodles & spinach until everything was incorporated and the spinach is just a bit wilted. (Here is where I added a bit more milk as I saw fit- less milk is more like a casserole & more is like a baked mac n cheese) 
  4. ‍Then top it all with nutritional yeast & paprika or Spicy Chimichurri
  5. ‍Bake for 18-22 min
  6. ‍Let cool for 5-10 min. 
  7. Serve & enjoy :)
