In a food processor combine all of the ingredients except the noodles, spinach & Spicy Chimichurri
In a large bowl combine the sauce, Spicy Chimichurri, noodles & spinach until everything was incorporated and the spinach is just a bit wilted. (Here is where I added a bit more milk as I saw fit- less milk is more like a casserole & more is like a baked mac n cheese)
Then top it all with nutritional yeast & paprika or Spicy Chimichurri
Bake for 18-22 min
Let cool for 5-10 min.
