Chimichurri Veggie Burger

Ingredients

Veggie Burger
  • 1 can organic black beans, rinsed & drained
  • 1 sweet potato with skin, chopped & roasted
  • 1 cup steamed Brussel sprouts
  • 1 cup cooked quinoa
  • 2 tbsp Verde chimichurri
  • 1 tbsp lemon/lime juice
  • ½-1 tsp sea salt
  • ½ tsp paprika
  • ¼-½ tsp cumin
  • ¼ tsp black pepper
  • ¼ tsp cayenne 
  • Dash coriander 
  • Oven
  • Large Mixing Bowl
  • Blender/Food Processor
  • Baking Tray/Dish
Avocado Beet Chimichurri Crema
  • 1 avocado
  • 2-3 tbsp, roasted beets
  • 2 tbsp lemon juice
  • 1-2 tbsp Verde chimichurri
  • Sea salt to taste
  • Dash black pepper

Directions

Veggie Burger
  1. Preheat oven to 350
  2. ‍Have large mixing bowl & blender/food processor
  3. ‍Pulse beans until roughly blended & add to the bowl
  4. ‍Pulse sweet potato until roughly blended & add to the bowl
  5. Pulse Brussel sprouts until completely chopped & add to the bowl
  6. ‍Add all other ingredients & thoroughly combine
  7. ‍Press flat into the greased baking dish (mine was 13x9 in) 
  8. Bake for 20-25 min
  9. Serve & enjoy :)
Avocado Beet Chimichurri Crema
  1. In blender or food processor, throw all ingredients & blend until sauce is smooth
